Chocolate Orange Rice Pudding | 625 cals per serve
You will need:
(Serves 2)
2/3 cup arborio rice
100g dark chocolate
2 tbsp cacao powder
2 mandarins
500ml unsweetened almond milk
2 tbsp rice bran syrup or honey
1/2 cap of vanilla essence
Simple steps:
Rinse the rice under cold water to remove any unwanted dust from the grains then place into a thick bottom saucepan. Add about 250ml of almond milk to the pan and zest the oranges over the top. Add 2 tablespoons of rice bran syrup to the milk and give the ingredients a stir.
Bring the milk to the boil then reduce down to a simmer and cook the rice for about 15 minutes. Keep adding a little more milk every few minutes to prevent the rice from drying out.
Whilst the rice is cooking, segment your oranges and leave to one side. Squeeze the rest of the orange into the milk extracting the juice and stir.
Once the grains are ‘al dente’ (cooked but still with a bit of a bite) add the cacao powder and stir. Add a splash more almond milk and remove the pan from the heat.
Roughly chop about 80g of the chocolate, leaving a little to one side and fold into the rice pudding along with a little pinch of sea salt. The rice pudding should be lovely and soft but if it’s looking a little firm add a little more almond milk.
Serve in a small bowl and top with mandarin segments and a little extra grated chocolate over the top.
