Chocolate Orange Rice Pudding | 625 cals per serve

You will need:

(Serves  2)

2/3 cup arborio rice 

100g dark chocolate 

2 tbsp cacao powder 

2 mandarins 

500ml unsweetened almond milk 

2 tbsp rice bran syrup or honey

1/2 cap of vanilla essence

 

Simple steps:

 

  • Rinse the rice under cold water to remove any unwanted dust from the grains then place into a thick bottom saucepan. Add about 250ml of almond milk to the pan and zest the oranges over the top. Add 2 tablespoons of rice bran syrup to the milk and give the ingredients a stir. 
  • Bring the milk to the boil then reduce down to a simmer and cook the rice for about 15 minutes. Keep adding a little more milk every few minutes to prevent the rice from drying out.
  • Whilst the rice is cooking, segment your oranges and leave to one side.  Squeeze the rest of the orange into the milk extracting the juice and stir. 
  • Once the grains are ‘al dente’ (cooked but still with a bit of a bite) add the cacao powder and stir. Add a splash more almond milk and remove the pan from the heat. 
  • Roughly chop about 80g of the chocolate, leaving a little to one side and fold into the rice pudding along with a little pinch of sea salt. The rice pudding should be lovely and soft but if it’s looking a little firm add a little more almond milk. 
  • Serve in a small bowl and top with mandarin segments and a little extra grated chocolate over the top.
